Ground Korintje Cinnamon provides full, balanced and spicy flavor. Korintje (or Indonesian) is the most commonly found cinnamon in American kitchens and is the traditional cinnamon used in baked goods. It's often used in savory dishes to add depth of flavor as well.
Note: Coumarin is a chemical compound found in several plants, including cassia cinnamon, that can cause liver damage in large doses. If you wish to avoid this, use Ceylon cinnamon which is considered "true" cinnamon and does not contain coumarin. Cassia cinnamon has a stronger flavor which is why people like to use it in recipes instead of Ceylon cinnamon.
